VITAL BERRY “ANYTIME” POPSICLES

With the longer days and spring just around the corner, I’m already planning some “sunny weather” recipes. And, of course, there’s nothing better on a hot day than a popsicle!

I’m always on the lookout for fun ways to sneak nutrients into my little ones’ diets—and my own. So, when I tasted the new Vital Berry, I was blown away! The combination of apples, strawberries, raspberries, oranges, mangos, and acerola cherries makes for naturally sweet, kid-approved juice. It tastes delicious and it’s full of vitamins so momma can feel good about it, too.

I use Vital Berry to make popsicles that my kids can’t get enough of. Simply blend with two whole bananas to add creaminess, and then top with antioxidant-packed blueberries and granola for a bit of crunch.

The result is a superfood snack on a stick that’s the perfect treat at any time of day. It’s a fun take on a smoothie bowl for breakfast, a satisfying post-lunch snack, or a perfect guilt-free dessert.

Ingredients

  • 1 bottle Organic Vital Berry
  • 2 bananas
  • ½ cup Blueberries
  • ½ cup Granola
  • Special equipment: Popsicle molds and sticks or ice tray

Directions

    • Step 1

      Blend Vital Berry with bananas until smooth.

    • Step 2

      Sprinkle 1 tbsp. granola into bottom of each popsicle mold.

    • Step 3

      Add Vital Berry and banana mixture to each mold, making sure to leave at least ½ inch space at the top to allow for toppings.

    • Step 4

      Tip: Try one popsicle from start to finish to test out how much room you’ll need to leave at the top of your mold to avoid them overflowing.

    • Step 5

      Add 4-6 blueberries (it’s okay if they sink!) and another 1 tbsp. granola to the top of each popsicle mold. Gently press granola down into the mixture.

    • Step 6

      Place lid on molds and add popsicle sticks. Freeze until popsicles are hard, at least 4 hours or overnight.

    • Step 7

      Run bottom of molds under warm water to loosen popsicles.
